can i save a big amount of gas if i turn off my ac or im just wasting my sweat in the heat?

AC compressors are very efficient these days, the mileage penalty is so small you would hardly notice it.
You will not save much at all, especially on the highway where wind resistance from open windows will make it a draw. Around town maybe a little, but not enough you’d notice.
Less that 1/4 mpg. The compressor only uses about 1 horsepower.
